Level up your merienda with these quick munch recipes
Breakfast, lunch, and dinner are just not enough. We all live for a delicious afternoon snack – or as we Pinoys call it, merienda.
There are a variety of merieda we can choose from, from the classic Halo-halo to the staple banana cue, there is just a never-ending possibility on what we can munch on for our light afternoon snacking.
And if you in the mood to try something new yet simple, here are some quick and easy merienda recipes by Tasty that you can try at home!
1. Easy Popcorn Shrimp
In a medium-sized bowl add and mix together 1 cup of flour, 1 tablespoon of Cajun seasoning, 2 teaspoon salt, and 1 teaspoon of black pepper. Place half of the mixed powder in a large zip bag and add in 1 pound of deveined and peeled shrimp. Shake the bag until the shrimps are coated with flour (shake off excess flour if any).
In a separate small bowl add and mix well one egg, 3 tablespoons milk, and 1 tablespoon of Cajun seasoning. Dip the coated floured shrimp in the egg batter then coat again with fresh seasoned flour.
Fry the shrimp in heat oil at 350°F/180°C for a few minutes or until golden brown.
Grab any dipping sauce of your choosing and enjoy!
2. Cheeseburger Onion Rings
In a large bowl mix together one pound ground beef, 1 teaspoon salt, ½ teaspoon pepper, 1 teaspoon of onion powder. Next, peel and slice one large white onion by half an inch then detach the rings from each other. Take a spoonful of the beef mix and fill the bottom half of the onion ring, take a piece of square cheddar cheese, and put on the center of the beef then seal the top with another spoonful of beef mix.
In separate bowls, place 1 cup flour, 5 eggs (beaten), and 3 cups breadcrumbs. Proceed by dipping your onion ring with beef mixture into the flour (shake off excess) then into the egg, then the bread crumbs, then back to the eggs, and one last time into the breadcrumbs. Fry the rings for 5 to 6 minutes, or until deep golden brown. Drain excess oil on a paper towel, then serve with ketchup!
3. No-Bake Chocolate Peanut Butter Balls
In a large bowl mix together ½ cup melted butter, 1 ½ cups peanut butter, 2 ½ cups powdered sugar to make dough. Make one-inch balls from the dough and freeze for about 20 minutes. Next, microwave some chocolate chips for 60 seconds (stop every 15 seconds to check and stir).
Remove the peanut butter balls from the freezer, using a toothpick, dip the balls into the melted chocolate then place on wax paper. Wait for the chocolate to harden or you can opt to refrigerate. Enjoy!
